While at the North Scottsdale Farmers Market, I found the most incredibly sweet cantaloupe from On the Vine. Our little guy is now feeding himself, but we can’t quite tell which hand he’s partial to because he just indiscriminately shovels food into his mouth with both hands, especially when he’s got bits of cantaloupe on his high chair tray.
I’ve never tried prosciutto wrapped melon before, and thought that a friend’s pool party was the perfect excuse to give it a try. It is a brilliant flavor combination and balance of salty and sweet. This is an ideal summer time appetizer so you don’t have to cook or bake in 110 degree weather.
Prosciutto Wrapped Cantaloupe
8 wedges cantaloupe, peeled
8 slices proscuitto
Peel outer skin of cantaloupe. Cut in half to spoon out seeds. Cut cantaloupe into wedges. Wrap slice of prosciutto around the cantaloupe. Simple! Serves 8.
